Tropical Butt Burning Ribs

Ingredients:
I Kg beef or pork ribs
100 ml pineapple juice
4 Tbls soy sauce
'Calypso Tropical Butt Burner' sauce to taste
2 Tbls honey
2 Tbls tomato sauce
Sprinkle of Oregano

Method: Combine all ingredients Marinade ribs over night Cook the ribs the way you like 'em!

Tropical Ham Steaks

Ingredients:
4 ham steaks
4 pineapple rings
3 Tbls "Smack my ass and call me cindy"
Salt & pepper to taste

Method: Grill ham steaks Grill pineapple separately Sprinkle with salt & peppers Baste steaks with 'Calypso Tropical Butt Burner' Continue to grill briefly Top with pineapple Done!

Aussie Back Burn Chilli Beef

Ingredients:
1 Kg ground beef
I large onion
1 1/2 Tbls Cumin
I tin chopped tomatoes
2 Tbl tomato paste
1Tbls Cayenne pepper
1/2 cup kidney beans
Tbls all purpose flour
2 cloves garlic
Salt & pepper to taste
3 Tbls 'Aussie Back Burn'

Method: Braise onion and garlic briefly add beef mince cook well making sure to not let the beef clump together. When cooked through quickly mix in the flour, add Cumin, Paprika, chopped tomatoes & tomato paste, mix well. Add 3 Tbls 'Aussie Back Burn' pepper sauce & salt pepper to taste (add extra water if desired). Serve with steamed rice.

Fire in the hole Wing Sauce

Ingredients:
1/2 bottle 'Fire in the Hole'
2 Tbls honey
1 Tbls margarine
Freshly squeezed lemon juice
Salt & pepper to taste

Method: Fry chicken wings for 10 minutes at 180ºC Combine all sauce ingredients. Heat briefly in a microwave until hot or margarine is melted. Pour sauce over wings & toss wings in sauce lightly.

Chicken and Mango Hot Bot

Ingredients:
1 Kg chicken thigh fillets
1 medium size mango
1/2 cup coconut milk
Salt & pepper to taste
'Ginger and Mango Hot Bot' to taste
1 tspn ginger

Method: Blend Ingredients Simmer chicken in sauce till tender Done! Serve with steamed rice.

Hot Mango 'N' Ginger Seafood sauce

Ingredients:
1 cup of mayonaise
1/4 cup tomato sauce
Juice of 1/2 a lemon
Dash of Worcestershire sauce
3 Tbls 'Hot Mango and Ginger pepper sauce
Salt & pepper to taste

Method: Combine all ingredients Done!

Blurter Hurting Guacamole

Ingredients:
4 Medium Tomatoes
4 Ripe Avocados
Juice I/2 lime
1/2 Small onion
1 Clove Garlic
Small bunch fresh coriander
Salt Black pepper to taste
Blurter Hurter Chilli Sauce to Taste

Method: Combine all ingredients. Done!

Hot Bot Mango Dressing

Ingredients:
1 medium size ripe mango
2 cups mayonaise
2 Tbls 'Mango "n" Ginger Hot Bot' (that's all you need!)
Salt & pepper to taste

Method: Blend all ingredients. Ready! Use to zest up some left over potatoes, as a mayo replacement or (my favourite) on a ham and tomato sandwich.
